I use a laminate trimmer made by rigid. Its basically a handheld router with a 1/4" shank rather than the beefier 1/2" shank. Slap a roundover bit in there and you're good to go. Just make sure your edges are nice and smooth before you run the trimmer over it; i recommend a hand plane to get any bumps out.
If you don't wanna invest in powertools, a decent sized sureform is way quicker and easier to use than sandpaper.
