Hypothetically speaking, 180mm randall trucks... same duro and only difference being diameter size difference and brand:

Would I notice a drastic difference in stability or anything else?

not really 70s just dive a lil more and tend to grip better with the same amount of contact patch. 75s last longer thats about it

shameless lies.

smaller wheels spin at a higher rpm and drift a little more smoothly for their shape because of it.

edit: also, 75mm otangs will roll over anything.
