they're not entirely dead, so lathing wouldn't be the most difficult thing to do...

i just keep seeing the bushings coming out of the destroyed soft wheels
and i'm kinda bummed that i can't really do the same

Stack them up on a piece of pipe or tube, get a lamp kit, run the wiring through the pipe, and make a lamp!

Make them into/use them as feet for something, like electronics.

At Slide Quest slide comp in Bristol, they made a trophy out of loads of flatspotted wheels, which was SICK! Going to any slide comps in the near future? Make a trophy for em!
