Center-Set, Off-Set, Whatever-Set
I'm trying to put together a better picture of what these terms mean in my head. Can anyone give me some definitions of the different *types* of wheels, and maybe even some examples that best fit them? This will help me sleep better at night.

I'm pretty sure that center set slide the easiest, and side set grip the most. I may be wrong.

I'm not saying I know the answer to the question, but as per the picture, grippins are centerset, and they're some of the stickiest wheels out there sooo . . . it must be a little more complicated than that.
Anybody???

In short I believe that's right, but I don't want to get into a physics description of it...although from just a qualitative perspective using leverage and such without any deep thinking it makes sense.
Edit: Grippiness and such has to do with many factors such as durometer, lip shape, contact patch, etc. When looking at centre/side set, the centre set is a narrower stance and also you have more control over the entire wheel since the bearings are in the middle, and that is where your trucks are "contacting" the wheel. Side set wheels offer a wider stance which should give more stability. It should also take a bit more force to get them into a slide.
I'm pretty sure that slide wheels are not only centre set because you can rotate them, but also because centre set just slides with more control. Of course this is all just what seems to make sense for me, if anyone actually knows the real deal then I won't feel bad if you prove me wrong.

The thing is to see how the PU will deform with the configuration, more deformation = less speed and smoother
just think about where your wheels are used in each of these setting.

Assuming that duro, lip profile, width, etc.. are all the same, a centerset wheel would be grippiest because more load is put on the inside of the wheel than outside.

Grippins happen to be built around being grippy. I'm not sure why they're centerset. But if you look at mega grippy wheels like Avilas, then I'm pretty sure those are side set. You can't use just one example to determine grip.

Centre sets are grippiest. Side sets drift smoothly. Offsets are a combination of the two.

i think it depends as well of wich side you turn.
In a turn if you take the exterior wheel, with a center set half of the wheel will really act, than with an offset wheel all the wheel will be used.
the thing is you have less deformation with a centerset so if you take the two side of the board (int/ext) there is more area used with center set.
