i just do carving, cruising, some slides and DH should i put in those spacers between my bearings or dont bother?

Simple answer, yes. And use speed rings as well.

i have extra sets lying around from my skateboards, i took them out of al my skateboards. im putting them on my longboard right now. now for the speed rings after i put them on i can just tighten my nuts all the way on the axels of the trucks right? or should i still leave some space like i do on my skateboards

tighten the nuts till the wheels do not spin free then back them out a little till the wheels spin free. No gap
