Another thing to keep in mind, if the wheels were coming off the ground when leaning very hard, then the trucks may not have been loose enough. Your trucks are going to be much looser than you are accustomed to when switching to a longboard. There is no way I can lean hard enough to lift the wheels off the ground on any of my longboards, to give you an idea...so keep that looseness in mind when checking for bite. Either way, you won't want to go lower than 70mm so that's fine...but check on 76mm wheels.
Wider wheels won't give you more chance for bite, only larger diameter wheels. Wider decks though will have more susceptability to wheel bite, which is why they commonly have cutouts or get narrower by the trucks. And you are right, in general wider wheels grip more. But moreso I find wheels with a hard lip (edge of wheel) will grip more, where a radiused (rounded) wheel will go into a slide easier...which isn't necessarily a bad thing when you're learning. I love radiused wheels for lots of uses, they are fun.
