A few questions

Would the chinook be good for pumping, carving and DH? Would the Evo be good for pumping, carving and DH? What would be a good board for DH but a nice pumper and carver?

I'll tell you what, I love my Evo! A bit on the heavy side but other than that it's perfect! With the right bushings it is very pumpable. It's a great carver and it was made for DH.
I'v never riden the Chinook so I can't say.

I say get the Evo. You WILL NOT be disappointed!

I feel like BigZigs or ZigZags would be good for what you said your doing. I have them on my Evo. Gumballs are awesome too. There all great for pumping, DH, and carving.

It all comes down to personal preference tho.

Do you know if the flywheels (90mm) are good for carving?

the flywheels are made for drifting being dh wheels. if you want something simmilarly large with better grip get a set of seismic speed vents 85mm in either 75a or 78a i run those on my subsonic swift (simmilar to evo but no wedge/dewedging) and they're super grippy esepecially with the redesigned urithane formula.
