Really any camera that can do 1080p or even 720p is going to be good, and even 480 or 600 lines is decent. If it's a digital camera (and not a dedicated video camera) make sure it can record unlimited length, some cameras only let you record like 30 seconds or 2 minutes. To record HD you also need a fast memory card, most SD cards can't transfer fast enough for 1080.

Obviously the more zoom you get the better. The zoom factors they usually give you are stupid and meaningless, what actually matters is the focal length and that will be written on the lens. You are probably going to want to record someone far away, so the larger number matters more... if it's 75 to 100 you should be ok (this is going with what a 'consumer' camera will have). Look at something far away when you try it out.

OK, none of that is all that important... you NEED TO HAVE A TRIPOD and that is the major thing that will determine whether you get watchable footage. Otherwise the subject moves all over and it looks bad and amateurish. You can do better with a $50 camera and a tripod than you can with a handheld $5,000 camera.

Canon t2i or GoPro. Remember it's who's behind the camera that matters.
