Yes the grooves serve a few things. Weight is the first, second is the cut outs for the wheels and third is looks. The ridges are more flavorful. I like the pic of the potato chip that's cool thanks Lollygog for the reference to the deck. I do agree with what you said.

How does cutting grooves increase surface area? I would think it would decrease the surface area as well as weaken the strength of the deck, call me crazy!
The "grooves".. or "ridges" in Any potato chip add strength and increase surface area.. therefore porviding a more "flavorful" experience

OK, All I can say is there's a little bit of fiber in the grooves and the dado is smaller. I added two biscuits on the top and two on the bottom to add strength to the board also.
