I am going to chime in and say that you won't want to make the whole thing carbon fibre. I would recommend a "rail" style luge with a carbon body and bodypan. Look at the SC8 Luge for some inspiration, I suppose.
There's an ?Italian or Portuguese writeup somewhere on the internet of someone doing this... and a YouTube video if I'm not mistaken (somewhere).
Laying 'glass is easy, but I've been told CF steps up the work a bit (edit: someone in the room just told me this isn't really true, and if you've got good skill in e-glass or s-glass it's not a big step to carbon).
Use the search, check out google, and good luck.
Oh and get a good respirator. Glass dust is nasty... Carbon dust is outright gnarly, and technically I think you need specific respirators for the job.

Bill Smirtic has made a few carbon fiber luges, I believe it came down to the luge being to light under him, and made a switch back to the metal luge with carbon fairings and schtuff.
