vintage 27incher setup

i ride a 29inch jay adams z flex with 129mm trackers and 70mm abec 11's, i got super lucky finding that board on craigslist, but i recently came across 2 MPI decks, one is a fiberglass 27inch tie dye cruiser, the other one is an MPI lemon drop, same size just no kicktail, im planning to get clear griptape for the tie dye one and had a question about trucks and wheels, i wanna get the Tracker 85mm MidTrack Darts, or something around that size, not wide at all, and some abec 11 new skoolz,
my question is whether to get 65mm or 60mm, and im not to sure about what size risers i need to not get wheel bite, both decks are flat on the bottom and id rather not sand down anything so i wont it wheel bite either
